  • Graduate of Le Cordon Bleu, Chef Bryan is classically trained in French cuisine and techniques, infusing every dish with skill, creativity, and genuine love. Over the years, he has worked in a variety of dining establishments, mastering flavors and styles from around the world.

    Having fully immersed himself in Mexican culture and street food, Chef Bryan has partnered with world-renowned restaurateur Richard Sandoval and Taco Pegaso to bring the most flavorful offerings—blending authenticity with his own unique flair.

    Each of his dishes is crafted completely from scratch using the finest ingredients. His artistic eye and meticulous attention to detail keep him laser-focused on preparing meals that not only exceed expectations but also invite guests back for another unforgettable experience.

  • Leslie Durso is a globally recognized plant-based chef and lifestyle personality who brings her creative touch to Taco Pegaso’s innovative vegan offerings. With a deep love for Mexican street food and a commitment to sustainable, compassionate cuisine, Leslie crafts vegan versions of classic favorites that delight longtime taco lovers and new converts alike.

    Originally drawn to plant-based cooking as a way to combine her culinary curiosity with her values, Leslie spent years experimenting with bold flavors, textures, and ingredient pairings. Her journey led her to partner with Richard Sandoval for Taco Pegaso at Austin’s FareGround, where she designs the restaurant’s vegan offerings. From her signature Plant-Based Crunch Wrap to Corn Ribs and Vegan Queso all while staying true to authentic Mexican flavor profiles.
